Ingredients
- 2 lbs Stahl Meyer Smoked Turkey Necks
- 1 lb dried red beans
- 8 cups water or low-sodium chicken stock
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 3 garlic cloves, minced
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon cayenne pepper (optional, for heat)
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 1 teaspoon salt (adjust to taste)
- 1 tablespoon Worcestershire sauce
Directions
For a comforting Southern dish, start with 2 lbs of Stahl Meyer Smoked Turkey Necks and 1 lb of dried red beans. Soak the beans overnight or use the quick-soak method. In a large pot, sauté 1 chopped onion, 1 green bell pepper, 2 celery stalks, and 3 minced garlic cloves in oil until soft. Add 1 teaspoon of smoked paprika, onion powder, garlic powder, dried thyme, black pepper, and 2 bay leaves. Add the Stahl-Meyer Smoked Turkey Necks and 8 cups of water or chicken stock. Simmer for 1 hour. Stir in the soaked beans and cook for 1½ to 2 hours until tender. Remove the Stahl-Meyer Smoked Turkey Necks and shred the meat. Return the shredded meat to the pot, stir, and season with salt, Worcestershire sauce, and optional hot sauce. Serve over rice or with cornbread, garnished with parsley or green onions.
